What's your favorite type of meat (eg, beef, lamb, duck, etc) and how do you like to have it cooked?

I'm a big fan of pork, myself. I love braised pork belly, pulled pork, bacon, chops, etc...but really, bbq pork is the best thing in the world.

I love pork related meat-style meat. :( Ham, bacon, salami, random German pork things that I get at Anya's, kassler, frankfurters, sausages etc. I am especially fond of that tinned ham you get which has the aspic stuff round the edge. :O However, I really like pigs as animals and so I feel bad when I see them in non food related ways. I also like chicken, beef (hmm, jerky), and fish, if you're including that as meat. I don't eat lamb and haven't done since I was 8. :O

I like all sorts of meat if its cooked in a nice way. I ain't too fussy.

I had some yummy beef last night, and I think there is some left over, so will be having a beef sandwich later...mmmm....

Then pork, like El10t said, most pork products are great, apart from pork chops. There is a Polish store on the market in the city centre, where we often get a few sausages.

Chicken is okay, but if not cooked right can be too dry.

I find lamb kinda bland if it isn't with anything. I usually smother it in gravy or mint sauce. If I have a curry I usually have it with lamb.

Duck is good, but I only ever have it if I go to/order in chinese.

I want to try some ostrich burgers. You can usually buy them at local markets. Glastonbury Festival has an ostrich burger stall that I think Melvyn Bragg mans :O

It would have to be between beef and lamb for me. I enjoy a pork chop but find them a bit....tedious sometimes. Pig meat is best for the fried shit like bacon, gammon and sausages.

Poultry can be really nice, but I would 9 out of 10 times pluck for the red stuff. That said, Duck is ghetto, and quite contrary to popular opinion I really like turkey :O

as for the question at hand, i think my favourite family of animal to eat- though it's not really "meat"- is fish, mostly salmon, shrimp, lobster, tuna (filet or steak, not in the can... not that that's bad for tuna salad or whatev), crab, calamari, mussels when i'm in the mood, especially in a killer red sauce. i like seafood to be extremely fresh and prepared fairly simply; if it's good and fresh it has a lot of flavour on it's own and doesn't need a lot of dressing up.

i like other kinds of meat too. i probably eat chicken most frequently, but that's more of a convenience/bang for buck thing- a lot of protein for little fat and calories, and it's versitile. I like pork, a nice filet... my favourite pork product has got to be guava ribs at a local cuban restaurant, they're unreal.

I forgot about fish. I haven't experimented enough to judge, all I've had is the battered variety - cod and haddock etc. I have never had tuna or salmon :O Tuna freaks me out a bit since this weird kid I went to little school with had it everyday at lunch and he smelt bad, but salmon looks nice so I don't know why I've never plucked for it before. Mmmhh might have to soon.

Halibut
Mongchong (aka Hawaiian Lemon Snapper)
Sablefish (aka Black Cod)
Pike

Boneless chicken; if I want it fried I have strips, and if I want it grilled it must be in a salad.

I like beef I guess. I like pork as seasoning in like black eyed peas and collard greens, but I am not a fan of like pork chops or pork by itself. Fish is probably my favorite, like Meggie...and I eat a lot of chicken but it's not my favorite - the grocery store nearby has good chicken strips, there's a Chick Fil A at the mall I work at that I eat when I don't bring lunch (which is sometimes chicken strips from the grocery store when I DO bring lunch...) the local chinese place has good chicken dishes and my mom cooks chicken - I eat it because I'm not picky, it's good and it's there but it's not my favorite.

Ideally I would be a steak or hamburger once a month, fish almost half the time, the occasional dish flavored with pork, and like veggie half the time. If I wasn't lazy and cooked more often that's probably how I would eat.

The problem with chicken nowadays is that it seems to be everywhere. We paid £30 (Approx $60) to have a meal and a dance for our School Leavers Ball. You'd think a chef at a well-respected hotel would be able to cook chicken but it was dry. Chicken needs to be done right.

I love beef. Especially a rare steak, nothing can really surpass that.

I really like lamb actually, especially if it's tender and just breaks when you dig the fork in. It's fantastic in stews. We had tagine of lamb for Christmas dinner and it was fantastic. Lovely and tender.

I just ate a pork chop left over from last night. I like pork's versatility. You can use it for a lot of things and also with other meats. Shoulder of pork would be one of my favourite cuts of meat.

I really enjoy eating fish and wish I ate more. Mackerel is just fantastic to have with salad, potatoes or by itself. So simple and healthy. In terms of favourite fish, perhaps sea bass but I haven't had lemon sole in a while.

I had this for dinner on Friday. Scrumptious:

fish wise I like:

tuna, dover sole, swordfish, kippers, sardines, haddock, red/grey snapper, talapia.. I don't think there's any fish I particularly dislike, though I am less inclined towards salmon, though I like smoked salmon more than a salmon fillet. Seafood wise I eat mussels, shrimp/prawns, crab (if it's in a dressed crab salad thing, don't like the idea of scooping out a crab shell) and clams. I won't touch calimari, lobster or oysters.

i
01-29-2007, 02:42 PM
My favourites are pork and beef, maybe pork by a whisker because it's in more foods I love (sausage, salami, ham, bacon, etc.) but then again some of very favourite meals both include beef (beef noodle soup - or a good quality medium or medium-rare steak).

I find chicken a bit boring (unless deep fried) and turkey extremely boring. I love duck tho. A expertly cooked leg of lamb is delish as well.

I love seafood too, fish is good but I really love scallops + crab. I like mussels and squid, etc. too but I'm not huge on oysters. Caviar is yummy tho. Prawns are good but sometimes they taste funny depending on how they're cooked. I used to enjoy lobsters a lot more than I do now.

We can blame the French.

I could be wrong, but I believe we call cow meat beef, because the old french word for cow is a similar word to beef. Whilst the old french word for pig is similar to pork.

And when I say old, I mean OLD....from the middle ages, and I'm guessing from around the time of the Norman Conquest.

maybe it's cos cows and pigs are mammals and we subconsciously realize that they have feelings and emotions and thoughts and dreams and souls and we KILL THEM AND EAT THEM AND MMM THEY ARE TASTY :(

plus we share 80% of our genes with pigs, which is why they're so great for medical research as well (and why we can share our diseases and ailments so easily) :D so they're not exactly the best meat for ya. i'm still gonna eat pork tho, lub it.

I realize birds are smart etc etc but I just don't like em. If they were bigger they'd eat me. A cow will never try to eat me. Fish are dumb.

but beef is boeuf and pork is porc

pork is from Latin "porcus" for pig/swine, which is apparently originally from ProtoIndoEuropean forms
beef is from Latin "bos" for ox/cow via Old French "boef"

does cooking meat scare anyone else? i'm afraid i won't cook it thoroughly and i'll die. on the other hand, i hate overdone/dry meat.

almost a week ago we hosted a dinner party where i was the featured cook. i lightly floured 5 chicken breasts and seared/crisped them for a moment then threw them into a pot with red wine and a can of chopped tomatoes then let it cook on low for an hour and fifteen minutes. it fell apart, i guess it was sort of pulled-chicken, and was tender. also, no one died. i was rather proud!

Peter
02-03-2007, 01:44 PM
i'm not at all worried about cooking most meats....veal is a bit worrysome because it's prone to more bacteria than most anything else due to it being baby cow meat. Everything else is pretty easy to guage....chicken shouldn't be pink, beef should get nice and hot, but even eating it rare is fine and fish shouldn't be raw in the middle (unless it's salmon or tuna or other red/pink fish)

kendra

Well, I am omnivore, as I like a mixture of meat and vegetables, I even occassionally make a vegetarian meals (including soy or tofu) but I generally eat meat.

One of my favorite types of meat is duck. Now some people won't like duck regardless but for me I find that it depends on how its prepared. I have been to mid-range restaraunts, whether it be Thai, Italian, or just a random bistro, that server duck that tastes fantastic, whether bone in or more boneless duck breast. Unfortunately, every single place in Chinatown that I have tried duck at, I don't like it. It must be the way they prepare it. I have actually not made duck myself before, but I just bought some boneless duck breast at St. Lawrence Market here in Toronto. It was really expensive though, over $18 (around 3 times as much as the same amount of chicken would cost). I don't think I will be cooking it rare though.

I also like chicken, and turkey, and even quail. Turkey is a lot more versatile than most people seem to think it is. My older brother thinks its just wrong to have turkey unless its a traditional turkey dinner. Meanwhile, I have no problem using it in stir-fry or even lasagna (although I try to stay away from mixing meat with cheese).

I enjoy beef as well, but I can't take crazy amounts. Like I won't be seen eating a huge steak or a double or triple hamburger-tried triple once, ugh. The best is prime rib, but I prefer it either medium-well, or just plain medium.

Having chicken or steak in something like Morrocan tajine dishes is one of my favorites. Love fajitas as well.

Fish, the only fish I usually eat is either salmon or tuna sandwiches, and some gelfite fish on occassion (its special type of fish recipe, usually using a type of white fish, it's traditional jewish cuisine). I occassionally contemplate having more fish, but I always remind myself that I find most fish a little too 'fishy' tasting if you know what I mean.

I have tried pork and shellfish before, but found both disgusting (all incarnations of pork included). And before you assume that its because of me being Jewish, my parents never kept kosher (even my dad recently ate a burger with ground bacon inside it just because he couldn't taste it). Plus plenty of Jewish people break the eating no shellfish and pork rule, even though they aren't supposed to. I have been exposed to pork all the time, and bombarded everywhere with menus filled stuff that have pork in them, and don't find it all desirable.

there is no healthy pork out there, hence, i stopped eating it ages ago. i still have ham like once a year, but thats it.

chicken is the best, anyway you make it, its always so good, and you can do sooo much with it. skinless boneless chicken breast can be added to anything and make it better - and give you all that protien and little fat. chicken strips, chicken burgers, legs, thighs, fried, grilled, wings, chicken salad, roasted, put any version on a sanwitch and it's great. i dont mind turkey, but its just dry chicken with less options.. good on sandwiches though. fish i dont mind tuna, but thats about it. watching my dad catch and cut open and cook fish as a kid really turned me off it. i do want to start eating it more though because it is sooo healthy and i need to eat much healthier.
beef is good too, hamburgers, meatballs, meat sauces, whatever. im not big on steaks or anything too fancy, i hate meat when its hard, chewy, has the bone or veins attached :vomit:

i recently found out my grandmas meat pie (tortiere sp??) aka the best thing french people make, has a mix of veal and beef and chicken i think.. i always just thought it was beef, and felt so guilty for eating a baby animal all my life unknowingly, but it tastes sooooo goood.

the thought of eating something like veal or lamb or duck or liver or blood sausage or rabbit (my parents had to eat this stuff!) makes me wanna gag.
