Red lentil soup:
Ingredients:
2 onions
2 cloves garlic
2 1/2 dl red lentils (about one cup)
1 piece of ginger
12 dl vegetable stock (about 5 cups)
1/2 teaspoon turmeric powder
2 tbl spoons curry powder (or currypaste if you prefer that)
lemon juice
finely chop onions + garlic. Soften in some oil. Add lentils, grated ginger, stock and spices (salt, pepper). Let the soup simmer until the lentils are completely dissolved. Add the lemon juice when the soup is done. The amount of curry you use is up to you - want it hot use more, mild use less etc. Oh yeah, it's also nice to add some chopped parsley in the end. This is delicious trust me!

Ok.... Just finished the soup.... For anyone who gives a crap.... Here's recipe... And honestly.... It's good.
SWEET POTATO VEGETABLE
----------------------
- carrot
- onion
- celery (you know, the trinity!)
- 2 vegetable boullion cubes... or veg. stock.
- a couple cloves garlic
- 2 cooked sweet potatoes
- 3-4 tomatoes
- barley
- salt,pepper,bay leave
Ok..... Peep this.
Sautee the carrot, onion, celery in a touch of olive oil and margarine..... Quickly cut the sweet potato into slices or something bite sized.... throw those in.... then toss in ONE boullion cube... sautee man... sautee.... then throw in.... tomatoes(with juice), smashed garlic, bay leave..... add about six cups of water..... (or so.... it will cook down...) bring to boil.... throw in barley..... salt, pepper it.........
then wait until the barley is cooked through......
when this happens..... do a little dance.... make a little love...... then bust out a bowl..... remove the bay leaf.... dispense...... serve with a little Gruyere cheese on top... or whatever you have... cheez whiz might work... kidding... then dig in....... then come back here to sweet addy with a full belly and spread the love.... or at least the lust.
ok.
that went well.

Soup rules, mostly the ones my mom makes.. it's not really soup, in german it's called "Eintopf", I think the english word is stew...stuff where the spoon doesn't fall over when you stick it in hehehe.. carrot soup, potato soup, bean soup with vinegar and sugar and a lot of other stuff in it.. and a lot more.. all of them have little parts of sausages in it... hmmmm...
And close to where I work a soup-bar opened up, called Soupreme.. http://www.soupreme.org they even have some recipes on their site :)

Nothing beats Borsch. As far as I remember:
Fry short beef ribs in butter, chuck in lots of beef stock and an onion, boil, then throw in some cabbage, and some root vegetables of your choosing (sweet potato, parsnips and turnips are good) and any extra stock (duck or chicken is good) keeping on stirring. Meanwhile, boil some beetroots, blanch off the skins (conserving the red water), chop 'em and chuck 'em in to the beef, boil. Finally add the beetroot water. Boil down (But don't liquidise out the lumps - it should be a bouillon with lumps of veg in it). Secret ingredients are caraway seeds and a final squirt of lemon. Should be served with soured cream. This soup could solve wars.

Apple-butternut Soup!
I had this at a restaurant in Vermont & went home & tried to make it. I think I did pretty well. Here's what I came up with:
Core & peel 3 granny smith apples
Cut & scoop the seeds out of one good-sized butternut squash.
Nuke both until they are soft & squishy - the squash takes much longer than the apples.
Put soft & squishy apples into blender.
Scoop out soft & squishy squash stuff & put into blender with some apple cider & a bit of cream. Not much cream is needed, but if you're health-conscious, fat free half & half does well.
Liquify. You can adjust sweetness of soup by adjusting the cider-to-cream ratio, so you might want to add these gradually as you blend, tasting frequently. You can make it without any cider at all, if you want - it's still kinda sweet - but I personally like the cider.
Season with nutmeg, ginger, cinnamon, cloves... maybe a bit of salt & pepper... just make it so it's good! It's surprisingly easy!!

Used to be chicken soup with dumplings, now vegitarian soup with dumplings. Any soup thats a little bit thick, and preferably containing peas will work.

Wow! Recipies! Yay! That said, here goes.
Traditional Noland Family Chicken Soup Recipie( known to cure any illness yet encountered)
-two chicken breasts
-four cups water
-salt and pepper
-chicken stock
-two handfuls medium egg noodles
-a few shakes storebought Italian seasoning
Boil chicken in water for ten minutes(any more, and the chicken will get tough). Remove and slice into bite size pieces. Add salt, pepper and enough chicken stock until it tastes strong enough, but not enough to make it taste fake. Add egg noodles and Italian seasoning and boil until noodles are tender. Add chicken pieces back in before serving.

I just made the bomb diggityist Pot Roast, like, ever. I fooled around with ingredients to come up with my own recipe and hot damn! if it didn't turn out most delicious:
3 lb beef chuck roast (any good quality roast, don’t skimp, it makes a big difference)
3 or 4 TBSP Olive oil
1 med Onion, chopped
Teaspoon of minced or chopped garlic
Big dash of Rosemary leafs
Big dash of Thyme leafs
Kosher salt (to taste)
Black or white pepper (to taste)
2 TBSP of red wine vinegar
4 beef bullion cubes
2 cups of water
Mustard powder
4 strips of thick sliced bacon strips, sliced in pieces
4 med potatoes
Bundle of carrots cut into larger pieces
1 oven bag with tie (you can get them in the isle next to the sandwich baggies and tinfoil, etc.)
Preheat oven to 400 degrees
In a small saucepan put in bullion cubes and 2 cups of water and red wine vinegar and boil for a bit.
In a large skillet get olive oil hot and crisp up the pieces of bacon, add chopped onion and cook until caramelized. Next add all spices except for mustard powder. Cook until everything is all caramelized and kind of golden brown.
While spice mixture is cooking cut up carrots and potatoes into chunky, bite sized pieces.
Add a couple of TBSPs of flour in bottom of oven bag and shake (it helps to keep the roast from sticking to the bottom of the bag, plus will help form a organic, thick meat gravy from all the juices). Place bag in large, rectangle shaped (a deep lasagna pan works great, or even a disposable tin one from the store). Make sure the sides of the bag are totally inside the pan to protect bag from catching on fire in oven.
After the spice mixture is cooked add to the broth mixture and stir.
Blot off roast with paper towels and sprinkle a pinch of kosher salt on both sides. Rub a liberal amount of mustard powder on both sides as well.
In the same skillet that the bacon spice mixture was cooked in sear meat on both sides until it gets a nice crispy layer on the tops. Place roast in oven bag and pile carrots and potatoes around it on bottom.
Add spice mixture back into skillet and deglaze pan. Make sure to scrap all the crunchy meat particles into the sauce. Boil for a few minutes. Ladle mixture over roast and vegetables. Close bag up with tie, making sure to leave a tiny opening for ventilation.
Bake for 3 hours or until vegetables are tender. Meat should fall apart. Enjoy!
I also made lentils as a side dish too. Follow directions on back of package and add a couple TBSPs of olive oil, dried cilantro, package of Lipton onion soup mix, worchester sauce, bullion cubes, kosher salt, pepper, ginger, thyme, garlic powder, basil.
Serve all of the above with a yummy glass of red wine.

From the depths of the seas! Back to the block! Snoop Doggy-Dogg funky as the-the-the.... well, you get the
drift.
I just made soup tonight and thought I'd stir up this
old thread (pun intended) from the thread junkyard.
Here's what it was:
Summer Corn Chowder!
- Onions
- Garlic
- 5/7 ears Fresh Cut-from-Cob Corn
- Roasted Pepper
- 2 Potatoes
- Cayenne/Salt/Pepper
- 4.5 C Veg Broth
Sautee Onions and Garlic in olive oil. Toss in the
corn and diced roasted peppers. Add Broth and
potatoes. Hit it with the first round of spices.
Let cook until potatoes are cooked through. (At this
point, if you want you can ladel a couple scoops of
soup into a blender, blend and transfer back.)
Then, either spice to taste and either serve hot
or chill for a nice summer evening meal.
I dig this with toasted pita chips, too.
Mmmmmmm. Soup!

wow...a soup thread?
in the last couple of months i've made minestrone, borscht, chicken soup, and captain bob's potato cheese soup...my freezer never had it so good
i don't know about these chicken soup recipes that say the meat gets tough if you cook it more than ten minutes...the last chicken soup i made i cooked the whole bird on low heat for three days and the meat was fine...the key to chicken soup is to get all the good stuffs out of the bones...that broth turned out so fine the only seasoning i needed for the actual soup was one bay leaf...if you need to, you can always take the chicken out and cool it after a half hour or hour and remove the meat and then return the skin and bones back to the pot for the rest of the cooking...
most of my soups take a long time...i make a garlic broth for the minestrone...but captain bob's potato cheese soup is pretty easy and doesn't take long and is VERY good on cold nights...
saute onions and celery in one cube butter - low heat (i use one good size onion and all but the outer 3 or 4 stalks of celery - you want the leafy heart cut up in soup!)
peel and cut up 6-7 large potatoes and toss them in and stir well
add just enough water to cover the potatoes and bring to boil - cook until potatoes are soft
put a collandar into a large bowl and dump the pot - you want to keep the liquid
mash the potatoes and return liquid and potatoes to pot
add a good amount of Spike - it's an excellent flavoring for all soups but it's critical you use it in this soup
cook the soup on low for 10 minutes or so and taste - add any other seasonings you like but go easy on the salt
shred 1 pound mild cheddar cheese and stir into the soup (this is why you go easy on the salt)
when the cheese is melted - dinner is ready!
you can add broccoli or any other veggis you like to this...it's a little soupy the first night but after you refrigerate and reheat it - it thickens...
