I got caught up in trying out alcoholic recipes with my chicken because I was trying to find out what to do to use up bourbon.

I've tried honey-vegemite chicken with sherry--a little too strong on the vegemite.
and pasta and chicken with a pinot grigio sauce--a little weak.
and last night I made penne ala vodka which was very good. Definitely the best out of the bunch.
I have a recipe for chicken with vermouth for next time because now I also have a lot of vermouth to get rid of.

But I haven't found an easy and interesting recipe for bourbon. All I can find is the asian bourbon chicken and I don't like that stuff so much. Someone told me I can try marinating the chicken in bourbon and a few other things, so I tried that, but I ended up leaving it for 2 days on account of other things and by the time I cooked it, it was like taking a shot with very bite. awful.

Anyone have an idea of how to get rid of bourbon in cooking? I don't much enjoy drinking it unless it's in eggnog.

Cooking with booze soaked chicken sounds like a recipe for a burned face.

only the first couple of times. Eventually I learned to remove the pan from the heat before adding the alcohol.

Make some bourbon caramel, or you could just drink it like god intended.

Bourbon is really good in barbecue sauce. :drool:

haha! wow, you kind'a went crazy with that. Thanks. That first one looks good. I'm kind'a picky...I look first at the ingredients and stick to recipes that I don't have to buy stuff for. I don't have cornstarch. I don't really want to buy cornstarch because I don't know what else I'd use it for, except chicken marsala. And I don't have marsala wine. And if I did buy marsala wine, then I'd be stuck with trying to get rid of that.
I'm trying to go with the lowest common denominator here for main dishes.
I might be able to get away without using cornstarch, but I don't know enough about chemistry or cooking to figure that out for myself.

LOL, I did go a little crazy with it didn't I? Its because I'm a enormously fat man in a thinner man's body. :cry: I :heart: food too much. :cry:

Well, you only need 2 tablespoons of cornstarch for that recipe I think, so maybe you could pick up just a tiny bit at a bulk food store, that way you won't have any leftover stuff you need to use or get rid of. Or maybe you could just borrow a little bit from a friend who does have corn starch?

That's definitely an option. Thanks again. This list of recipes has really been the first time in nearly a year that I've actually cooked whole meals. The only cooking I've done in the past year has been single dishes for potlucks with friends.

does anyone know what to do with Vermouth? I don't even know if it tastes good in anything. I bought it to try out a drink someone gave me the recipe for and I absolutely loathed the drink.
