Hi guys, im new to the boards, but am a long time Pumpkins fan.
Anyhow, Im from England and have never travelled to the USA. However one of my favourite things to cook is Jamabalaya. Now Im sure it's totally un-authentic, so I was wondering if anyone could gave me some tips from the states?

good ingredients to include: spicy sausage, bell peppers, rice and some cayenne pepper

What kind of jambalaya are you looking for bongo? Seafood? Chicken and sausage?

I wasn't aware anyone in the States actually ate Jambalaya... at least not since bluegrass was cool and hippies got serious jobs.
Note: the only time I've ever had it, or seen it, or heard it referenced in a non-joke context for that matter, was at a bluegrass festival that my step-father dragged us to when i was 16.

Yeah... I forgot about that. I have a friend from New Orleans who frequently goes on rants about how much she hates jambalaya, albeit usually making fun of it, so... I hold to what I said! :D

While we're on the subject of Cajun food, anyone actually like dirty rice? I like Zatarains's, but I don't think I could eat the real stuff with the chicken gizzards and stuff. D:
