A pathetic attempt at an almond cookie at the dining hall's 'Asian Night'. (It was still really good, even though it was a sugar cookie with almonds on it).
Also, how is it vegan to make miso soup with chicken broth?!

my favorite beet recipe:
2 medium sized beets, wrapped in aluminium foil and roasted in the oven for an hour
then you plunge them into cold water until they are cool enough to touch
the skins should slip right off of them, but sometimes I have to use a peeler a bit
then you have to chop them and wash the beet blood off of everything
that stuff stains :eyepop:
then I cool them and toss them in with some arugala and and a few hunks of goat cheese.
Then you crush some raw hazelnuts into big pieces (i use a frying pan and a ziplock bag) and sautee them in butter until they are all fragrant and toasty, then whip in the juice of a lemon to cool it off and emulsify it and dump it on the salad. Then salt & pepper it.
This salad will convert almost any beet hater.

A pickled cucumber, most often simply called a pickle in the United States and Canada, is a cucumber that has been pickled in a brine, vinegar, or other solution.

We have a similar thing in the North East of scotland. We call it 'Stovies'.
Traditionally it was a way of using leftover meat (usually beef). Properly made they are beautiful. But can be done oh-so-wrongly in some places..........
